Rough Rice is the business of Adam James who makes some of the most stunning ferments on the planet. Whether it be miso, turmeric, broad beans, carrots or anything else he can lay his hands on, the products he loads into his array of large crocks become sublime accompaniments to almost every dish we eat.
You can try and buy the ferments at his stall at the Farm Gate Market in Hobart. In winter he serves his version of congee which uses high quality rice cooked in an umami-laden stock. You can then order the ferments, often about eight different varieties, as topping for the rice. These add umami, complexity and sophistication to the dish.
