A long term player on the coffee scene in Hobart is Villino with their eponymous retail outlet in the centre of Hobart in Criterion Street. They also supply roasted beans to other leading retail places such as Audrey in Rosny and Pigeon Whole in Argyle Street.
Now they have moved their roasting and distribution outlet to the semi-industrial zone in Moonah next door to Pigeon Whole’s commercial bakery centre.
Sitting in from of the Villino “factory” is a coffee outlet called “Wondr.” which sells the range of Villino coffee beans as well as cups of coffee made from the roasted beans. As an added bonus they also have snacks from Pigeon Whole such as their famous pastries as well.
There is seating along the front window, some more near the entrance to the factory where you can see the activity within, and also some outside seating for the warmer weather.
On our recent visit we enjoyed a Caturra coffee (Caturra being the variety of bean that was used) from Costa Rica which is becoming an important player in the coffee game.
The beans were sourced from the producer William Mora Merno who farms coffee in the Tarrazu region of Costa Rica. They used the black honey process which is quite complicated. It sees the coffee cherries fermented whole for 15 days. This means that the fermentation of the mucilage of the cherry adds flavours to the bean inside the cherry giving added sweetness to the coffee.

Our new home in Moonah came to us as a largely blank slate, and offered the opportunity to create a new café and retail space, alongside a purpose built production, green storage, cupping lab, workshop, and training spaces.
