Six Russell – Introduction
Things are changing in Sandy Bay and all over Hobart and suburbs. What has this got to do with a small cafe in Russell Crescent opposite the monolithic Coles supermarket? Well, quite a lot.
Over the past six months we have watched with interest as the most wonderful pastries and breads have started to appear in cafe after cafe and then Eumarrah and then far flung places such as the venerable Audrey in Rosny. And where do they come from? At the back of the site that used to be occupied by Wing and Co, but which has been undergoing renovation for quite some time. This is where Six Russell bakery is situated (but not open to the public) and turns out an ever changing array of pastries and some fantastic loaves of bread under the watchful eye of the multi-talented Kobi Ruzika of Dier Makr and Lucinda.
We buy the bread from Eumarrah on one of the many times we drop in there each week to buy organic fruit, vegetables, milk and butter and much more. We also enjoy the pastries at places such as Somewhere Coffee where Brian makes incredibly good coffee or Shake Roasters in Moonah where we might order one of the Six Russell pastries such as their incredibly light but crunchy Crullers topped with sugar, or a croissant filled with ham and cheese or, sometimes, the difficult-to-make and butter laden Kouign Amann which is popular in the coastal area of western France where there are plenty of cows to provide the cream for the butter.
The site, when finished, will also house a restaurant cum cafe, which we are very much looking forward to visiting when it opens.
In the meantime, we are currently enjoying dropping into Area 2BE on either Friday or Saturday for a light lunch of excellent sandwiches and a coffee and maybe followed by a serious pastry made by one of the talented young chefs that Kobi has installed here.
